Nerikiri is a traditional Japanese sweet made by heating a mix of Shiro-an (white bean paste) and Gyuhi (soft mochi) into a smooth, sweet dough that is shaped into beautiful designs.
In the Japanese tea ceremony, sweets are chosen to enhance the flavor of the tea and reflect the season or theme of the gathering.
Nerikiri are delicate, artistic confections known as Omogashi—the highest form of hospitality—and are especially enjoyed with Koicha (thick tea).
